Ice Cream Mecca

In the spirit of 2018 being my year (You do You, Lean In, The life changing magic of not giving a F**K – shout out to my sisters preaching treat yoh self) I have adopted a misguided attempt to live a life best suited for me, to fully embrace my body being a temple and nourish it with wholesome good food. However, this journey to self-discovery doesn’t leave much room for a weekly treat and despite my inclination to cut corners, I have a discovery fitness test coming up and if I am awarded low points, my mother will never let it go that we should be a category out, if her children weren’t so lazy. So, I found myself at a cross-roads: do I give up on my attempt to be the highest point generating child of parents or do I indulge in the delicious treats the world has to offer.

IMG_6992.jpgI have quite a few treats that I find myself dreaming about and let me tell you, ice cream is quite high up on the list. Ice cream is a treat; no one in the world can say that it is not. The cold dairy against a hot summers day or even a cold winter’s night has the ability to warm you from within and remind you of a happier time. [See more]

But, like all good things, ice cream is too good to be true. Expect, is it really? With the rise of plant-based living and hippy choice of life, you can enjoy the life treats at a healthier standpoint. So here, without further a due, I introduce you to the most moussey, light and creamy chocolate ice cream by the wonderful Nicky Wills. Welcome to the wonderful life of Choccie Coconut Ice-Cream


Ingredients

  • ¼ of honey
  • 1/3 cup of coconut oil
  • 1/3 cup of cocoa powder
  • 2 tsp of vanilla extract
  • 1 can of coconut cream
  • 2 bananas

Method

  1. Blend all ingredients together
  2. Pour into a container and place in the freezer
  3. Stir ice-cream every few hours (unless you have an ice cream machine which will do everything for you) to prevent icicles formation
  4. By 8 hours, your delicious choccie coconut ice cream should be ready!
